我完全同意刘老师的分析。在此补充几点作为参考：
1. that which通常用在十分正式的语体中，更常用的形式是 what, 例如：
What (That which) upsets me most is his manner. 最使我心烦的是他的举止。
2. that which 表示具体明确的事情；what表示笼统的事情。例如：
Don't criticise that which you don't understand. 对你不懂的事情不要乱批评。（与某个具体的事情有联系）
Don't criticise what you don't understand. 凡是不懂的，就不要妄加批论。（指笼统的事情）
3. 在谚语中，常常使用that which， 例如：
That which is evil is soon learned. 坏事易学。
That which is well done is twice done. 一次做得好等于做两次。
That which one least anticipates soonest comes to pass. 越是意料不到的事越容易发生。
刘老师：
这里的that 是指示代词，不是关系代词，后面完全可以跟一个定语从句。为了避免读音上的重复，指物时关系代词原则上用which。又如：
What's that which flashed in the sky just now? 刚才在天空中闪烁的是什么东西?
That which is evil is soon learnt. 恶行易学。
You cannot ask for that which I give freely. 你不用奢望从我这能捞到什么便宜。
